  • 8 ounces wide egg noodles (or preferred noodles)
  • ½ cup fresh parsley, chopped

Instructions

  1. Brown the Chicken: Heat olive oil in a Dutch oven over medium-high heat. Season the whole chicken with salt and pepper. Brown on all sides until golden, about 5-7 minutes per side. Remove and set aside.
  2. Sauté the Vegetables: In the same pot, add onion, carrots, and celery. Sauté until softened, about 5-7 minutes. Add garlic and cook for another minute.
  3. Simmer the Soup: Return the chicken to the Dutch oven. Add chicken broth, water, bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for 1-1.5 hours until chicken is tender.
  4. Shred the Chicken: Remove the chicken, discard skin and bones, and shred the meat. Return shredded chicken to the pot.
  5. Cook the Noodles: Add egg noodles to the soup and cook until tender, about 8-10 minutes.
  6. Finish and Serve: Stir in fresh parsley and lemon juice (if using). Adjust seasoning if needed. Serve hot and enjoy!

Notes

For best results, use bone-in chicken for maximum flavour. To freeze, store without noodles and add fresh noodles when reheating.
