Ingredients

  • 3 lbs Chicken Pieces
  • 2 cups Buttermilk
  • 2 tablespoons Hot Sauce (optional)
  • 3 cups All-Purpose Flour
  • 1 cup Cornstarch
  • 3 tablespoons Paprika
  • 2 tablespoons Garlic Powder
  • 2 tablespoons Onion Powder
  • 2 tablespoons Dried Thyme
  • 1 tablespoon Dried Oregano
  • 3 teaspoons Sea Salt
  • 2 teaspoons Black Pepper
  • Shortening or Vegetable Oil (for frying)

Instructions

  1. Marinate chicken in buttermilk and hot sauce (optional).
  2. Whisk together flour, cornstarch, paprika, garlic powder, onion powder, thyme, oregano, salt, and pepper.
  3. Bread chicken in flour mixture.
  4. Fry chicken in hot oil until golden brown and crispy. Drain on a wire rack.
  5. Serve hot.

Notes

Increase hot sauce and add cayenne pepper for spicier chicken. Add lemon zest and fresh herbs for a lemon-herb variation. Use smoked paprika for smoky flavor. Serve with mashed potatoes, coleslaw, biscuits, or mac and cheese.
