- 2 lbs Chicken Drumsticks and/or Thighs
- ¼ cup Avocado Oil
- 1 teaspoon Kosher Salt
- ½ teaspoon Black Pepper
- 1 cup Panko Breadcrumbs
- ½ cup Cornstarch
- 1 teaspoon Garlic Powder
- 1 teaspoon Onion Powder
- ½ teaspoon Paprika
- ½ cup Honey
- ¼ cup Butter
- 2 tablespoons Apple Cider Vinegar
- 1 tablespoon Sriracha Sauce
- 1 teaspoon Red Pepper Chili Flakes (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Pat chicken dry, season with oil, salt, and pepper.
- Combine breadcrumbs, cornstarch, garlic powder, onion powder, and paprika.
- Coat chicken in cornstarch, then dip in water, then dredge in breadcrumb mixture.
- Bake chicken on a wire rack until golden brown and cooked through.
- Whisk together honey, butter, vinegar, sriracha, and chili flakes (optional). Simmer until thickened.
- Glaze chicken with hot honey sauce, bake briefly. Serve hot.
Notes
Use maple syrup for a richer sweetness. Add herbs to the breading for a savory twist. Increase sriracha and add cayenne pepper for extra heat. Serve with coleslaw, mashed potatoes, corn on the cob, or rice and vegetables.
