  • 4 tablespoons unsalted butter, cut into small pieces
  • For the Topping:
  • 1 large egg, beaten
  • 1 tablespoon granulated sugar

Instructions

  1. Make the Pie Crust: In a bowl, whisk together flour and salt. Cut in cold butter until mixture resembles coarse crumbs. Gradually add ice water, stirring until dough just comes together. Divide into two discs, wrap, and refrigerate for at least 1 hour.
  2. Prepare the Apple Filling: In a large bowl, combine apples, sugars, flour, lemon juice, cinnamon, nutmeg, allspice, and salt. Toss to coat apples evenly. Let sit while rolling out the crust.
  3. Assemble the Pie: Preheat oven to 375°F (190°C). Grease a 10×15-inch baking sheet. Roll out one dough disc into a rectangle to fit the pan. Transfer to the pan and press into the edges. Spread apple filling evenly over the crust. Dot with butter pieces. Roll out second dough disc and place over the apples. Trim and crimp edges to seal.
  4. Bake the Pie: Brush top crust with beaten egg and sprinkle with sugar. Cut slits in the top for steam to escape. Bake for 50-60 minutes, until crust is golden brown and apples are tender. Let cool for 30 minutes before slicing and serving.
